Thanks to everyone who posted on my etiquette questions. I thought to myself, "What the hell was I thinking?!", especially after I talked to my mother, who pretty much said that too! I think we are going to work out a weekend of affairs - I'll keep you updated and will probably need some ideas for showers!
So, I posted about Cooking Light & how I wanted to become a fab cook - well, its gonna take awhile with trial & error, I believe!
I had this Spinach & Artichoke dip
from Cooking Light prepared when all of our guests arrived on Friday. Well, everyone ate it and said it was good, but in my personal opinion waaaaaay too cream cheesy. I would half the cream cheese & double the spinach. Also, I would add some more garlic for flavor and more regular cheese to hold it together. I think it was ok, but I think next time I will make those changes or just find another recipe. The low-fat just didn't cut it.
But I did make a breakfast casserole for everyone the next morning. I don't have a specific recipe but I just cooked up some grits (enough for about 6 people), cooked up some sausauge ( I used links - not knowing if everyone wanted sausage, so I could easily serve it without) but if you can use regular crumbled sausage - I would recommend that. I put the grits in a 2 quart casserole dish, then put the sausage on top, whipped up about 6 eggs and poured them into the casserole, then added a layer of cheddar cheese on top. Cooked it for about 35 minutes and served it. That was a big hit and everyone was able to enjoy it. I like having a breakfast or brunch dish when I have out of town guests because I just think its nice to be able to feed them before they get on the road. And then you also aren't stuck at Waffle House trying to get a table for 6!

I enjoyed your post on cooking and did use one of the new sandwich recipes from Cooking Light last week and it was fab.
I have an awesome recipe for breakfast casserole that uses the same ingredients as yours, just with flaky layer biscuits pressed into a bundt pan, layer of egg, cheese, grits, and sausage, top with more biscuits, 1/2 stick of melted butter and bake.
You can turn it out onto a cake plate and it looks awesome - good presentation with little effort. LOVE IT!
OH I like the sound of that Preppy Peach! I used one of the sandwich recipes too, and we loved it!
