Warm Meal on a Cold Day

**It's by Lundberg farms (I think), I found it near the rice/couscous/specialty pasta section!**


Yum.

I made this Butternut squash risotto for lunch the other day. A combination of a few of my favorite things: butternut squash and risotto. It was a cold, blustery day and the warm risotto hit the SPOT. It's low-cal, low-fat and gluten free. It was creamy with hints of squash but not overpowering. I added a handful of green peas b/c I wanted to up my veggie factor and they added green to the bowl. P didn't like it - too mushy and not enough meat. What can ya do? More for me. (Because I was seriously close to eating the entire box - it was low cal enough though that I didn't feel guilty).

Off to drink some wine and watch Jon & Kate plus 8. I've been subbing the past few days and all I've gotta say is hats off to the teachers/mamas/full time working mamas because I'm pooped taking caring of myself, my man and my dog!

I'm going to have to make this! Yum. I love butternut squash! I made lemon risotto the other night, it was perfect for a snowy evening. Good minds think alike! :)
